Cucumber & Boursin Sandwiches
INGREDIENTS
• 6 slices very thin white sandwich bread, frozen
• 1 (5.2-ounce) package shallot and chive–flavored Boursin cheese (or flavour of your choice), at room temperature
• 1 (6-inch) section English cucumber with peel, finely sliced
STEPS
1. Butter 12 slices of frozen bread. Spread Boursin on 6 slices. Top with cucumber. Cover sandwiches with remaining 6 slices of bread. Trim crusts and slice each sandwich diagonally into 4 triangles.
2. Place sandwiches in a resealable plastic bag, or cover with damp paper towels while bread defrosts to prevent sandwiches from drying out.
