Strawberry Freezer Jam
INGREDIENTS
• 2 Qt Basket Strawberries
• 3 1/2 cups Granulated Sugar, Certo recipe calls for 4 cups
• 1 pkg Certo
• 3/4 cup water
STEPS
1. Have clean and dry food storage containers or jars ready and set aside***.
2. Set aside 1 whole strawberry (halved) per jar of jam to insert in jars at the end. Using a potato masher, crush remaining strawberries one layer at a time until you have 2 cups. Pour into a large bowl. Stir in sugar until dissolved. Let stand for 10 minutes.
3. Combine water and Certo in a small saucepan. Bring to a boil on high heat, cook for 1 minute, stirring constantly. Add to fruit mixture. Stir for 3 minutes.
4. Pour into prepared jars leaving at least 1/4-inch space from the rim (to expand once frozen — otherwise jars can crack!). Cover with lids.
5. Let rest at room temperature 24 hours (or until set) then transfer to freezer (save one for the fridge!).
6. Refrigerate up to 3 weeks or freeze up to 1 year. Once frozen thaw overnight in refrigerator.
